The Balivo—a figure who in the Middle Ages represented the Count of Savoy in the Aosta Valley—today is the guardian of the region’s culinary excellence, passionately selecting the finest Alpine flavors.

The menu changes with the seasons, ensuring freshness and quality thanks to a careful selection of ingredients. The staff works with care, prioritizing the authenticity of local products.
Aosta Valley tradition is reinterpreted by Chefs Andrea Massazza Gal and Pierluigi Sguazzini, who offers a contemporary and never boring take, showcasing the authentic flavors of the mountains.
On the wine list, you’ll find the best of Italian production, with a special focus on heroic mountain viticulture. The selected Aosta Valley wines are born from a choice based on trust and direct knowledge of the winemakers and their work.
